Chef Coulson Armstrong on Food, Fashion, and Personal Style

Top Chef Canada winner and Prime Seafood Palace Executive Chef Coulson Armstrong has spent the last decade earning his place among Canada's most respected culinary talents — from Oliver & Bonacini to Noma in Copenhagen to the dining rooms of Toronto.

As a longstanding friend and client at Harry Rosen, we caught up with him to talk food, fashion, and everything in between.

How would you describe your cooking style or “cuisine” at home?

“Really seasonal, one pot wonders — 30-minute meals. You want to be quick, you don't want to overthink it, you just want it to be tasty.”

How would you describe your personal style?

“My personal style is very focused on workwear — I'm not always in my chef whites, but I'm always working. I need jeans that I can work in, in and out of the truck.”
