There’s something truly special about taking those first steps into nature each spring, as we search for the season’s earliest greens. With Copenhagen growing greener by the day, our team has been out foraging for young shoots and blooming flowers—an eagerly awaited moment.
Back at the restaurant, these signs of summer have sparked new creativity: the test kitchen is now in full swing developing the next menu, and our days are filled with tastings and refinements. As we continue to explore what is sprouting and shooting just beyond our doorstep, we’re delighted to let you know that we will open summer reservations from July 1st through September 26th.
