The Starbucks beverage team selected kabocha pumpkins for their smooth texture and pumpkin-pie flavor. They typically weigh between 3.5 and 5 pounds—and they’re small enough to fit in the palm of your hand.

The real secret? “I just say, ‘Come on honey, you can do this.’ ”

“You have to giggle a little bit when you’re out there in the field because we know I’m not in charge,” Leber said. “Mother Nature has the final say in it all.” When PSL season arrives each autumn, he and a few friends toast the arrival of the season in the pumpkin fields with—what else?—a Pumpkin Spice Latte.
