Neapolitan Ice Cream Bars

Serves: 12

These colorful frozen treats are perfect for picnics, parties, or keeping on hand whenever you need an easy summer dessert.

  • ½ cup crushed chocolate cookie crumbs
  • 1 pint Straus Family Creamery Organic Dutch Chocolate Ice Cream, softened
  • 1 pint Straus Family Creamery Organic Vanilla Bean Ice Cream, softened
  • 1 pint Straus Family Creamery Organic Strawberry Ice Cream, softened
  • 12 popsicle sticks
Line a 9x5” bread pan with parchment paper. Sprinkle the crushed cookie crumbs into the bottom of the prepared pan. To make three layers, first scoop the chocolate ice cream over the cookie crumbs, spreading evenly. Top the chocolate ice cream with a layer of vanilla ice cream, followed by the strawberry ice cream, each spread evenly. Press the popsicle sticks into the ice cream in two rows, spacing them apart. Freeze the pan of ice cream for at least 12 hours. Once completely frozen, remove from the pan and use a sharp knife to cut the bars into individual servings.

Homemade Magic Shell

Adapted from Jenn Yee (@PastryWithJenn)
Serves: 8

Magic Shell is one of the easiest ways to elevate a bowl of ice cream. While the classic flavor is chocolate, pastry chef Jenn Yee created two colorful versions using white chocolate flavored with raspberry and matcha powders.

Raspberry Magic Shell
  • 4 oz (115g) white chocolate
  • 2 tablespoons refined coconut oil
  • Pinch of salt
  • 2 tablespoons raspberry or other fruit powder
Matcha Magic Shell
  • 4 oz (115g) white chocolate
  • 1 tablespoon refined coconut oil
  • Pinch of salt
  • 1 ¼  teaspoons matcha powder
In a small heatproof bowl, combine the white chocolate, coconut oil, and salt. Microwave at full power in 30-second bursts, stopping to stir in between each interval, until fully melted. Give a few more stirs at the end to fully incorporate the ingredients. Add either raspberry or matcha powder. Whisk to combine. Let the magic shell sit for about 10 minutes to cool down before drizzling on top of ice cream. If the magic shell gets too thick or hardens, simply microwave it again to melt it back down. Drizzle over your ice cream and enjoy!

What Makes Ice Cream "Super Premium"?

You may have noticed the words “super premium" on our ice cream cartons, but what do they actually mean?

”Super premium” refers to ice cream made with less air (known as low overrun), resulting in a denser, creamier texture and more concentrated flavor. Higher butterfat also contributes to the rich, silky mouthfeel that sets super premium ice cream apart.

At Straus Family Creamery, that quality starts long before the ice cream is churned. We use organic milk and cream sourced from family farms along California’s northern coast, and each batch begins with cream high in butterfat and incorporates minimal air, resulting in an exceptionally rich texture. Egg yolks serve as the only stabilizer, and all flavors are certified kosher and free from artificial flavors, colors, and preservatives.
