This lot is a natural process and is produced by fourth generation farmer Wilmer Cuellar on his farm Las Brisas in Huila.

The combination of variety, terroir, and processing leads to an absolute fruit bomb. We taste blueberries, grapes, ripe plum, and, coincidentally, papaya!

Here’s some more about the process: Wilmer Cuellar grows Papayo on his farm Las Brisas, and through experimentation, discovered that processing it as a natural further enhances its complexity and fruitiness. It has a juicy body and a long-lasting aftertaste.

After harvesting, the Cuellar family allows the coffee cherries to ferment in sealed drums for 96 hours. The coffee is then dried on raised African beds for three days before undergoing a final drying stage in a mechanical dryer. Finally, the coffee is stabilized in plastic bags for at least two weeks, allowing the flavors to fully develop.
